comfort food

Having family visit is always a good excuse to make big batches of soup and cookies. These two recipes were first time try-outs but they became instant favorites.

Vegan "Chicken" Noodle Soup - If you served this soup to a meat eater they would have to be very discerning to tell the difference. I doubled the recipe and also added seasoned tofu and sliced baby bella mushrooms. Yum! But I kinda blew it by using the non-vegan variety of a vegetarian chicken style broth. It was super tasty but was a problem since my brother can't have any dairy and unfortunately I didn't look at the ingredients until after the soup was made. Good thing I have veggie burgers on hand.

And these Vegan Chocolate Chip Cookies are amazing. I doubled this recipe too and cut up a dark chocolate bar in place of the chips. I really think you should make these - you won't regret it.
